In Colombia and Latin America, the management of used fats and oils from industrial kitchens is, paradoxically, classified as domestic wastewater. That regulatory gap hides an environmental and operational risk that can now be demonstrated with data: discharges from industrial kitchens can exceed the legal limits for fats and oils by up to 380 times.

With Javier De Castro, general manager of Zhana Solutions, we present the results of the study (water footprint, carbon footprint and ecotoxicology), the policy recommendations to reclassify industrial kitchens as non-domestic discharges —a change that will affect the entire HORECA sector— and the circular opportunity: how removal technology reduces pollution and opens the door to energy recovery.
